4-6 Fish Fillets (I used flounder)
1 cup rice
1 16oz can black beans
I started by preheating my oven to 350. Rinse off fish and pat dray with a paper towel and lay into your pan. Melt 2 tbsp butter in microwave. Once melted add your minced garlic. I do this by sight alone but I’m guessing that I used about 1/2 a tsp. Drizzle the mixture over the fish. Sprinkle on salt and pepper then parsley. Cover with foil and place into the over for 30 minutes (may need to cook longer depending on your oven. On my stove top I bring 2 cups of water and 1 tbsp butter to a boil. My rice calls for 2 parts water to one part rice. Yours may be different so follow the directions on the package for rice. For this recipe I used onion flavoured rice. Just my preference though. You may use whatever kind of rice you would like. While I am waiting for the water to boil I open my can of beans and drain and rinse them. This is also just preference. If you don’t want to rinse or even drain you don’t have to. When the water is to a boil I add my uncooked rice and my beans. I turn to low, cover and let cook til all the water is absorbed.
