South West Rice

1 cup Arborio Rice

3 cups chicken broth

1 cup corn and pea frozen veggie mix

1 cup canned black beans (drained and rinsed)

1 tbsp butter

1tbsp olive oil

1 tsp minced garlic

1 tbsp dried onion flakes

Spices (parsley, salt, pepper)

1/2 cup cheddar cheese

In a sauce pan melt the Oil and butter together. Then add the garlic and onion flakes. Let them mix together for about a minute. Add the rice; let it cook for about 2 minutes in the butter/oil mixture. Then add 1 cup of chicken brother. Once all that is absorbed into the rice add another cup of broth and let that once absorb into the rice as well. Then add the last cup of broth, black beans, peas and corn mix, and spices. Let cook. Once all the broth is absorbed add the cheese and let it melt. Enjoy your rice!
