1# turkey sausage

8 slices of turkey bacon

1/2 ring of turkey kilbosa

Tater tots

Shredded cheese

2 dozen eggs

Salt & pepper

Onion powder

Garlic powder

Preheat oven to 375. Brown your sausage and drain. Brown your strips of bacon. Cool then cut into small pieces. Cut your kilbosa into chunks of your desired size. Brown in a pan. In a 9×13 pan spray with olive oil cooking spray. Add enough tots to cover the bottom of the dish. Place in oven for 12-15 minutes until the tots can be mashed gently. I use a plastic meat masher. Sprinkle tots with onion powder, garlic powder, salt and pepper. Add the kilbosa, sausage and bacon to the top of the tots. Mix up your eggs in a bowl and add salt and pepper. Pour over the tots and meat. Egg should just barely cover the meat. Cook in oven for 40-45 minutes until the egg is all cooked. Then sprinkle with cheese and pop back into the oven until cheese is melted.

You can use any meats you want. I just use turkey because I cannot eat pork. I also often add peppers and onions. I sauté them in a pan before adding them to the mixture, but if you like them with some crisp left just add them raw. I also sometimes add mushrooms that I sauté in garlic and butter. However, Alex doesn’t eat mushrooms so I don’t do that often. I like to cut up avocados on the top once on my plate. This is a great dish to customize however you want to with really any ingredients you have laying around.
